"Medai" or Japanese

"Medai" or Japanese butterfish live in the Pacific side of Japan, 100 to 300 meters deep in the ocean. Body color changes as they grow from blue-gray when they are young to brown later on.

"Me" means "eye" and "dai ( = tai)" means bream or snapper. Even though they have a name "Tai" it is not snapper or bream, they are similar to bluenose or pompano. The meat texture is similar to madai (Japanese sea bream) but fat content is way higher. The size varies from 2 to 20 pounds. Large size fish often have more fat and have better flavor. It has a nice buttery flavor.

The color of the bloodline changes very fast, so it might be better to take it off when you serve it as sashimi. It is really great for any cooking application. We are using the medai as the protein for the current Shabu Shabu dish on the menu.
